For an easy to make sugar free apple muffins, follow this recipe:
- 3/4 cup whole wheat flour (or all-purpose flour)
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup blueberries smashed
- 1/2 cup almond milk
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup apples – peeled and finely chopped
Preheat oven to 200 degrees. Spray the muffin pan with nonstick spray.
Whisk the flour, baking powder, salt, and cinnamon together in a large bowl.
Make a well in the middle of the dry ingredients and add the smashed blueberries, milk, egg, and vanilla. Gently mix everything together until combined. To finish, fold in the apples.
