Diabetic friendly American Birthday Cake

An easy to make diabetic friendly and sugar-free birthday cake. Can also be served on other special occasions.

Ingredients🫙:
- 12 large egg whites
- 1-1/2 teaspoons cream of tartar
- 1 cup white flour
- 1.5 and another 1 cups Erythritol (separated)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon almond extract
- 1 teaspoon grated orange zest
- 1 teaspoon orange extract
Steps🥣:

Put the egg whites in a bowl and set aside for the moment

Sift flour and 1 cup Erythritol together twice and set aside.

Add the salt, cream of tartar, almond and vanilla extracts to the egg whites; beat on until soft peaks form (not too fast).

Gradually add remaining Erythritol, about 2 tablespoons at a time, beating on high until you receive stiff glossy form and sugar is dissolved.

Gradually add flour mixture, about 1/2 cup at a time.

Spoon half of the batter into an ungreased round tube pan (recommended pan size-25cm, if you do not have a tube pan, you may use a round object to create a circle form).

Stir the orange zest and orange extract into the remaining batter.

If desired add food colorings.

Gently spoon orange batter over white batter.

Cut through both layers with a knife to remove air pockets.

Bake on the lowest oven rack at 190°C for 30-35 minutes or until lightly browned and the entire top appears dry.

Take out the cake and immediately invert the pan.

Cool completely (should take about an hour).

Run a knife around the side and center of the pan to detach the cake from the pan.

Remove cake to a serving plate.

Add any kind of topping you would like to (we like melting sugar-free chocolate chips and mixing with heavy cream- see above photo)
